Case of the Mondays?

Good Morning!

How was your weekend?

My parents visited for my Mom’s birthday and it was wonderful.  Saturday we went to the Shed Aquarium because we knew my 18 month old son would love the “shishies” (his name for fishies).

Will Fish

He really loved seeing all of the animals and we loved seeing his reaction to each and every one of them. One piece of advice for anyone going on a weekend to the Shed—get there when it opens. When we were leaving at 12 the line was out the door!

Saturday night we went to dinner at Bob Chinns Crab House.  My Dad has been talking about this restaurant for years.  He used to take business clients there and claimed they had some of the best seafood around (we live in the Midwest so it can be hard to find). I had to try it out and see what the hype was about. Lets just say the seafood was so darn good (lobster, king crab legs, oysters) and the mai thais’ were flowing.  We will be going back again for the King Crab Legs—they were out of this world. I found out that Bob Chinn’s is the highest grossing restaurant in the country. They run quite the operation over there—I mean they go through 3,000 pounds of fresh seafood in one day. That is INSANE.

So all in all we had a fun weekend with my parents but as always it was too short.

I saw this quote on Pinterest and it hit home—a small step really can be the beginning of a great journey, so take those steps and see where they lead you.

Sweet Tooth: Chocolate Chip Cookie Dough Brownie Bites The ultimate sweet? When I make cookies I make them for the dough (shh, I only eat a little). These brown bites with chocolate chip cookie dough in the middle looks like the a special treat worth making.

Comforting: Cheddar Chive and Jalapeno Biscuits When I think of comfort food I think of a big bowl of chili with a really good bread or biscuit to go with it. These flavors sound like the perfect combo to compliment a big bowl of warm, spicy chili.

Wake Me Up: Coconut Pancakes Pancakes are a great breakfast to wake up to.  Pair these coconut pancakes with a fresh squeezed glass of OJ and a side of raspberries–a great start to your day!

Escape: Interlaken, Switzerland In two months I will be here….Switzerland has always been on my never ending bucket list of places to see. You can see why, right?

Snacking: Strawberry Rhubarb Fruit Leather Homemade snacks are the best because you know what you are putting in it.  Fruit leathers remind me of being a child.  This recipe seems easy to make and could be tailored to whatever fruit you like.

  1. Seriously, I always love these posts. I can’t believe you’re going to Switzerland! You’ll have to post pics of your journey. I’ve always wanted to go there, too, but was never able to decide between Zurich or Geneva. Love the lasagna and fruit leather ideas as well!

Thanks Haley! I have been debating whether I should continue to do the Case of the Monday post. I am not sure if many people like this type of post but I am glad to hear you do! It is fun to take time away from cooking and acknowledge other great food bloggers as well as things that interest me outside of food.

I am SO excited about Europe. We are actually doing Germany, Switzerland and Italy (I am secretly most excited about Italy). In Switzerland we are doing Interlaken but we spent a lot of hours going back and forth between so many places in Switzerland. I have a feeling we could spend two weeks in Switzerland but will only get a taste of it in two days. I hope to share my journey with everyone after I get back! :)

  2. I absolutely love your posts!! I love everything; especially those brownie bites!!
