Happy New Years Eve! I can’t believe that 2012 is coming to a close!
It has been a wonderful year for us and a great 4 months of sharing recipes on A Cedar Spoon. Thanks to everyone that has followed along on this journey and supported me–it is a work in progress and I am learning something new every day.
Cheers to 2013 and lots of delicious recipes to come!
Speaking of recipes–if you are still looking for drink ideas to serve to your guests tonight –I have a New Years Eve worthy recipe for a Pomegranate Mojito that we love! Cheers!
I am really into pomegranate juice right now, and I always love a good mojito.
- 2 tablespoons sugar
- 1 tablespoon fresh lime juice
- 12 mint leaves
- 6 tablespoons white rum (we used bacardia light rum)
- ¼ cup pomegranate juice
- Splash of soda water (club soda)
- Sliced lime for garnish
- Mint for garnish
- Combine the sugar, lime juice and mint leaves in a tall glass; mash with the back of a spoon.
- Mix in the rum and pomegranate juice.
- Fill glass with ice.
- Top with a splash of soda water (club soda).
- Garnish with mint and a lime slice.
