Asian Pork Lettuce Wraps are packed with your favorite Asian flavors and paired with ground pork, topped with cilantro and matchstick carrots and served in soft bibb lettuce wraps. These are light and the perfect easy meal!

Ingredients

For the pork lettuce wraps:

  • 1/2 cup cooked brown rice {or rice of your choice}
  • 2 Tablespoons olive oil
  • 1 cup sweet onion, chopped {about 1/2 of a medium onion}
  • 2 garlic cloves, minced
  • 1 pound ground pork
  • 1 lime, juiced
  • 3 Tablespoons low sodium soy sauce
  • 2 teaspoons red chili garlic sauce {I use Huy Fong, Chili Garlic Sauce}, more or less for spiciness
  • 1 teaspoon chili paste
  • 2 Tablespoons fresh ginger, peeled and grated
  • 1 cup fresh cilantro, chopped {plus extra for garnish}
  • 3 green onions, green part chopped
  • Salt and pepper to taste
  • 1 head of Bibb/Boston Lettuce, washed and separated

Garnishes:

  • Extra fresh cilantro
  • Unsalted peanuts
  • Matchstick carrots

Instructions

  1. Cook the rice according to the package.
  2. While the rice cooks heat the 2 Tablespoons olive oil in a large skillet and add the onion, sautéing for 2 minutes. Add the garlic and continue to sauté for 2 more minutes.
  3. Add the ground pork, fresh lime juice, soy sauce, chili garlic sauce, chili paste, ginger and continue cooking until the pork is browned.
  4. Mix the rice into the pork mixture along with the fresh cilantro and green onions and stir to combine. Add salt and pepper to taste.
  5. Serve the Asian pork mixture with crisp bibb lettuce and extra cilantro, matchstick carrots and unsalted peanuts for garnish.

Notes

Serving size is 1 3/4 cup of the pork mixture and 4 Bibb lettuce leaves. You would use a little less than 1/2 cup of the mixture in each piece of lettuce.

I actually think the leftovers for these Asian Pork Brown Rice Lettuce Wraps are just as good as the first day! The flavors really meld together a day or two later.

You can use whatever you favorite rice from white to basmati.
