Baked Chicken Parmesan

Baked Chicken Parmesan takes your favorite Italian dish and lightens it up. The baked chicken is juicy, yet crispy and great flavor with the sauce and cheese. Serve over whole wheat pasta with a side of vegetables and a salad.



  • 2 lbs. chicken breasts, sliced in half to create 2 thin chicken breasts
  • 3/4 cup whole wheat breadcrumbs (you can also use regular or panko}
  • 1/2 cup grated Parmesan cheese, separated
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 2 Tablespoons butter, melted {you can also use olive oil if you would like, but I liked the butter flavor}
  • 1/2 cup low fat mozzarella cheese, shredded cheese
  • 1 cup of pasta sauce of your choice {I used marinara}
  • Olive oil {to spray on the chicken before baking}
  • Nonstick spray


  • Freshly chopped parsley
  • Freshly chopped basil


  1. Preheat the oven to 450 degrees F. Spray a large baking sheet lightly with cooking spray.
  2. In a medium mixing bowl combine the breadcrumbs, oregano, basil and 1/4 cup parmesan cheese in a shallow bowl. Set aside. Melt the butter in another shallow bowl and set aside.
  3. Using a brush lightly brush the butter onto both sides of chicken, then dip into breadcrumb and cheese mixture. Place the chicken on the baking sheet and repeat with all of the chicken. Lightly spray olive oil over the top of the chicken.
  4. Bake the chicken in the oven for 20 minutes and then turn each piece of chicken over and bake for another 5 minutes. Remove the chicken from the oven and spoon a layer of sauce over each chicken breast and top with the remaining parmesan cheese and the mozzarella cheese. Return the chicken to the oven for 3-4 more minutes, or until the cheese melts.
  5. Remove the chicken from the oven and garnish with freshly chopped parsley and basil. Serve over pasta with more sauce, extra parmesan cheese and crusty bread.


In place of the butter you can use olive oil or even egg whites.

You can use whatever freshly shredded cheese you like for this recipe.
