BBQ Spiced Grilled Egg and Cheese Sandwich is a quick and easy toasted sandwich using your favorite BBQ rub that is mixed with two eggs then fried, fresh basil, and cheddar cheese. This sandwich offers protein making this a go-to sandwich on the weekend after a morning of yard work, riding bikes or mowing the lawn.
I get inspiration from all kinds of places. Restaurants, magazines, cookbooks, cooking shows and most importantly friends and family. I love getting ideas from the people close to me because it helps me think outside of my little world, the types of foods I like to eat and create recipes likes today’s BBQ Spiced Grilled Egg and Cheese Sandwich. This is Mike’s favorite weekend go-to sandwich after mowing the lawn or playing outside all morning with the kids. He has been asking me to share this recipe with you for the past few months, so I decided that there is no better time then today. After thinking about this sandwich more, I agree with him that it is a good one to have on hand during the summer months and I am hoping you guys do too.
It uses two eggs, giving you that extra protein you need to get your through those hot summer afternoons. This sandwich can be made in under 1o minutes, which lets be honest, makes my husband happy. Lastly, his favorite part of this sandwich is the BBQ rub he adds to the eggs.
If you were to walk into our pantry you would see a whole shelf of rubs, marinades and BBQ spices. Mike is the griller in our house and loves his rubs. When I asked him what type of rub you should use with your egg sandwich he said “your favorite.” Ok, so not sure that helps, but for those that have a favorite BBQ rub, use that. For those that don’t have a favorite, you can easily go to your grocery store and head to the section that has grilling marinades and rubs and find one that suits your taste, whether that is a smoky rub or an extra spicy rub.
When I make this sandwich I like to add tomatoes, maybe avocado and sometimes I switch up the cheese. I love the fresh basil on this sandwich but if that is not your thing, leave it off. To all my sandwich people out there, make this one and let me now your thoughts. It will make Mike very happy to hear that others love it as much as he does!

Description
BBQ Spiced Grilled Egg and Cheese Sandwich is a quick and easy toasted sandwich using your favorite BBQ rub that is mixed with two eggs then fried, fresh basil, and cheddar cheese. This sandwich offers protein making this a go-to sandwich on the weekend after a morning of yard work, riding bikes or mowing the lawn.
Ingredients
- 2 eggs
- 1 Tablespoon BBQ rub {your choice}
- 2 slices of cheddar cheese {or cheese of your choice}
- 2-3 leaves of fresh basil, washed and stems trimmed
- 2 slices of bread
- Butter {enough to spread on one side of each piece of bread}
Instructions
- In a small mixing bowl mix together the eggs and the 1 Tablespoon of BBQ rub. Heat up a skillet over medium heat and fry the eggs. Once cooked, set the eggs aside.
- Butter one side of each slice of bread and set aside. In the same skillet put one slice of the bread with the butter side down on the skillet to cook. Put the egg, cheese and basil on the bread and close it with the other slice of bread {butter face up}.
- Once one side is toasted flip it over to toast the other side.
- Serve warm.
