Buffalo Chicken Hummus Bites

Buffalo Chicken Hummus Bites are a healthy twist on your favorite buffalo chicken dip using hummus instead of cream cheese. This creamy, spicy dip is baked inside of a mini fillo dough shell and then topped with more fresh blue cheese and celery. These are the ultimate tailgating and football watching appetizer!



  • 1 1/2 cups cooked, shredded chicken
  • 1/4 cup Sabra Classic Hummus
  • 1/3 cup crumbled blue cheese
  • 1/4 cup cayenne pepper hot sauce
  • 15 mini fillo dough shells
  • Garnish:
  • 2 celery stalks, leaves chopped and stalks chopped
  • 1/4 cup blue cheese


  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl combine the shredded chicken, hummus, blue cheese crumbles and hot sauce and stir until everything is coated in the hot sauce.
  3. Place the mini fillo dough shells on a baking sheet. Using a spoon fill each fillo dough shell with the buffalo chicken mixture. Bake for 10 minutes or until the edges of the mini fillo dough shells are golden brown and the blue cheese is melted.
  4. Garnish with additional blue cheese and celery. Serve warm.


I bought the mini fillo dough shells from my local specialty store {maybe like a Whole Foods} but I think most stores should carry them in the freezer section.[br][br]You can add more or less of the hot sauce depending on the crowd and how much spice people can handle.[br][br]I like to buy a rotisserie chicken for this recipe and shred that for quick and easy shredded chicken. You can then use the leftover chicken for other recipes like chicken salad or chicken quesadillas.[br][br]When chopping the celery save the leaves for garnish–they make the plate look pretty! :)[br][br]You can make these ahead of time and pop them in the oven when you are ready to serve.
