Buffalo Chicken Hummus Roll Ups are a quick and easy appetizer that your tailgating guests will love. The hummus paired with the spicy chicken and blue cheese mixture is baked in a tortilla to create a warm, creamy rollup.

Football season is in full swing. Tailgating was always one of my favorite things to do in college.  I can’t say I go to many football games now that I have kids but these Buffalo Chicken Hummus Rollups are not only for tailgating but perfect for the get togethers at your house to watch your favorite team or for your Superbowl party.

If you want to use these for an appetizer at your upcoming party they make great finger food but you can also eat these for lunch as a wrap.  I like to warm these up in the oven for 15 minutes but you don’t have to do that either.

Buffalo Chicken Hummus Rollups

I am a fan of spice so buffalo sauce has always been high up on my list of things I like. When you pair the cool, creamy Sabra hummus with it and the blue cheese it makes a delicious appetizer. You can’t have buffalo an blue cheese without celery so add some as a garnish right before you serve these.

If you are tailgating it might be hard to keep these warm so just serve them cold (they taste just as good) but if you are at home then warm them up to create an extra creamy rollup.

Buffalo Chicken Hummus Roll Ups are a quick and easy appetizer that your tailgating guests will love. The hummus paired with the spicy chicken and blue cheese mixture is baked in a tortilla to create a warm, creamy rollup.

Ingredients

  • 1 cup cooked, shredded chicken (I used a rotisserie chicken)
  • 2 Tablespoon Sabra Classic hummus (more or less depending on your preference)
  • 2 Tablespoons buffalo sauce (such as Franks Red Hot Original)
  • 2 Tablespoons crumbled blue cheese (extra for garnish)
  • 28 inch tortillas
  • Finely chopped celery for garnish

Instructions

  1. Preheat oven to 350 degrees.
  2. In a small bowl mix the shredded chicken, hot sauce and blue cheese.
  3. Spread the two tortillas on a cutting board or flat surface. Spread the hummus in a thin layer on each of the tortillas. Split the blue cheese chicken mixture between the two tortillas.
  4. Roll the tortillas up similar to how you would for a burrito. Place them in a small baking or casserole dish.
  5. Bake the rollups for 15 minutes. Remove from the oven and let cool for a minute. Use a serrated knife and cut each tortilla wrap into small rollups.
  6. Remove and garnish with finely chopped celery and crumbled blue cheese.

Notes

Use more of less hot sauce depending on how much flavor and spice you want. [br]While I like to bake these and create a hot creamy rollup, you do not have to bake them. You can eat them cold as a wrap or rollup.
