Chocolate Chip Banana Muffins are an adult and child favorite made with greek yogurt to help moisten the muffins.  These make a great snack or treat!

Chocolate Chip Banana Muffins

One of my favorite substitutes to use when baking is yogurt.  Sometimes I use greek yogurt and sometimes I use plain yogurt depending on what I am making. In these Chocolate Chip Banana Muffins I like how the greek yogurt moistens the muffins and adds additional nutritional benefits.

When I make something like Chocolate Chip Banana Muffins in my house I can almost guarantee you that they will be gone in no time. With these muffins I had to hide them so they could be photographed before they were devoured. Yes, the life of a food blogger. My son and husband like some of the benefits of having a mom and wife as a food blogger but not all of them. 😉

I often find myself with a couple of very ripe bananas which either means I put them in the freezer for smoothies or I make some sort of banana muffin or bread. If I enlist Will’s opinion it always ends in a variation of banana muffins–his favorite!

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 large egg
  • 3/4 cup packed light brown sugar
  • 1 1/3 cups mashed ripe bananas {I used 2 large bananas}
  • 1/3 cup Stonyfield Plain Greek Yogurt
  • 1 teaspoon vanilla
  • 1 cup dark chocolate chips

Instructions

  1. Preheat the oven to 375 F.
  2. Grease a 12 muffin tin or use paper liners.
  3. Whisk together the all purpose and whole wheat flour, baking powder, baking soda, salt, cinnamon and nutmeg in a large bowl. Set aside.
  4. In a mixer beat together the egg, brown sugar, bananas, greek yogurt and vanilla.
  5. Mix in the flour mixture until the dry ingredients are just moist {do not over mix, you want bumps in the batter}. Stir in the chocolate chips.
  6. Pour the batter into the muffin tins and bake for 14-16 minutes {a tooth pick should come out clean}. Let cool before removing from the pan.

Yep, ripe bananas tend to get turned into muffins over here too. Love the addition of chocolate chips.

I totally agree. Yogurt is awesome in baked goods. Love all the ingredients in these. Wish I had a muffin right now.
