Creamy Herb Vegetable Dip is made with cottage cheese, fresh dill, parsley and green onions and a splash of lemon juice. This is a good option for people that like to dip their vegetables in something without all the calories or guilt of some salad dressing out there.
1 cup low-fat cottage cheese (look for the Real Seal)
1 garlic clove
1 Tablespoon finely chopped onion
2 Tablespoons fresh dill, chopped
1 Tablespoon fresh parsley, chopped
1/2 teaspoon lemon juice
1/2 teaspoon olive oil
Salt and pepper to taste
Put all ingredients in a food processor and mix until smooth. Remove and put into a serving dish and chill for an hour.
Garnish with fresh herbs (like dill and green onions) and serve with vegetables, crackers or bread.
When making this dip you can adjust the herbs to taste. Once you chill it give it another taste and you can always stir in more fresh herbs to your liking.
