With Christmas fast approaching I am in the holiday spirit.  This time last year my family was living out of suitcases and our entire house was in storage. We moved into our house on Christmas Eve last year.  This year is extra special since it is our first year that we are all settled in our new house for the holidays. There is something so special about sitting around the lit up Christmas tree in our living room with the kids, listening to Christmas music and a warm cup of hot chocolate.

Of course being in the thick of the holidays also means cookies. Cookies are such a nice gift to give teachers, treat to bring to a holiday party or dessert to have at your holiday dinner. I always have a long list of cookies that I want to make each year and these Easy Chocolate Peppermint Cookies are going to be added to the yearly rotation. If you like chocolate and peppermint paired together then these Easy Chocolate Peppermint Cookies are right up your alley.

As the title says, these cookies are easy to make. One of my favorite things about these cookies is that they are soft and chewy, just the way I like them.  The best part of this recipe is that beautiful peppermint topping. Who doesn’t love a little crushed candy on the top of their cookie?

These cookies are a slimmed down version of the typical Chocolate Peppermint Cookies you might see around town. These cookies are sweetened with Born Sweet® Zing™ Baking Blend . If you haven’t had a chance to bake with Zing™ Baking Blend yet, you should give it a try.

Easy Peppermint Cookies - a holiday treat!

This recipe can be made in 4 easy steps:

Start by whisking together the whole wheat flour, all purpose flour, baking powder, baking soda and salt until combined.

Then using a handheld mixer or a stand mixer beat the butter and Zing™ Baking Blend until creamy {about 2-3 minutes}. Add the vanilla, peppermint extract and egg and beat until combined. Slowly add the flour mixture in on a low speed until just combined.

Using a cookie dough scoop or your hands form the dough into 24 balls and place them on the cookie sheets.

Using the back of your hand or a glass flatten each cookie. Sprinkle the top of each cookie with the crushed peppermint candy.

Bake for 7-8 minutes, or until a toothpick comes out clean.

Pull those babies out of the oven and let them cool completely on a wire rack. Of course you should test one while they are still warm.

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 5 Tablespoons unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 7 Tablespoons unsalted butter, softened
  • 1/2 cup Zing™ Baking Blend
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 large egg
  • 3 candy canes, crushed

Instructions

  1. Preheat the oven to 350 degrees F. Line two baking sheets with nonstick spray or nonstick baking mats.
  2. In a large mixing bowl whisk together the whole wheat flour, all purpose flour, cocoa powder, baking powder, baking soda and salt until combined. Set aside.
  3. Using a handheld mixer or a stand mixer beat the butter and Zing™ Baking Blend until creamy {about 2-3 minutes}. Add the vanilla, peppermint extract and egg and beat until combined.
  4. Slowly add the flour mixture in on a low speed until just combined.

  6. Bake for 7-8 minutes, or until a toothpick comes out clean. Cool completely on a wire rack.

Notes

I put the candy canes in a large ziplock bag, set it on my chopping block and use a mallet to crush the candy.[br][br]I have seen some people add the candy canes at the end of the recipe once the cookies are baked. I like to add mine before cooking and let them melt a bit. I think it creates a fun look and the candy hardens again once you remove it and let it cool. Either way is fine. If you wait to do it at the end of cooking I would suggest adding it to the cookies while they are still warm so the candy sticks to the cookies.
