Mother’s Day is Sunday and hopefully you having something special planned for your mom.
My mom lives in Tennessee so I had to send her a few gifts and of course will be celebrating with her in spirit. If I was having her over for brunch {I wish I could} these Easy Quick Bread Two Ways: Strawberry Banana and Cheddar Chive would be on my table. She would love them!
Not only is Mother’s Day coming but brunch season is too. From wedding and baby showers to spring get togethers, light, easy recipes are always needed this time of year. Brunch season calls for a handful of recipes to help you put on a great meal with ease. Today I partnered with Pamela’s Products to create Easy Quick Bread Two Ways: Strawberry Banana and Cheddar Chive, which are gluten-free and simple to make. These two breads are the perfect sweet and savory combination to have on hand for a brunch, offering your guests options depending on their tastes that day.
For these Easy Quick Bread Two Ways: Strawberry Banana and Cheddar Chive, I used Pamela’s versatile Baking & Pancake Mix. I created a sweet Strawberry Banana Bread and a savory Cheddar Chive Bread. Can your baking mix do that? I love that just one baking mix can give me the base for so many great breads, biscuits, pancakes and more.
If you haven’t heard of Pamela’s Baking & Pancake Mix it makes meeting your picky guest’s (and family’s) brunch preferences a breeze. To make these quick breads you just need to do a little measuring and mixing and let your oven do the rest of the work. It really couldn’t be any easier!
If you aren’t familiar with Pamela’s Products it started in 1988, and is known for delicious, gluten free foods with a full line of baking mixes, cookies and snack bars. The products use high quality sugars including fruit juice, agave, coconut sugar and molasses which create better tasting food.

Description
These Two Takes on Quick Bread: Strawberry Banana and Cheddar Chive Bread, are the perfect bread combination for your next brunch. These breads are easy to make and offer your guests a savory and sweet bread to choose from.
Ingredients
For the Strawberry Banana Bread:
- 1-3/4 cups Pamela’s Baking and Pancake Mix
- 3/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 eggs
- 1/2 cup brown sugar
- 1 teaspoon vanilla
- 1 cup very ripe bananas, mashed {about 2 large bananas}
- 1/4 cup melted butter {or butter substitute}
- 1 cup strawberries, hulled, sliced {about 5-6 strawberries}, plus one or two more strawberry sliced for the top
For the Cheddar Chive Bread:
- 2¼ cups Pamela’s Baking & Pancake Mix
- 2 Tablespoons sugar
- ¼ teaspoon salt
- ½ Tablespoons grainless baking powder
- ½ cup water
- 2 eggs, beaten
- 2 Tablespoons canola oil
- 1 1/3 cup cheddar cheese
- 3 Tablespoons chives, chopped {divided} 2 Tablespoons to go in the bread, 1 Tablespoon for on top
- 1/4 cup melted butter or butter substitute
Instructions
For the Strawberry Banana Bread:
- Preheat oven to 350 degrees F.
- In a medium sized bowl, mix together Pamela’s Baking & Pancake Mix, salt, cinnamon and nutmeg. In the bowl of a stand mixer, beat eggs until frothy, add brown sugar and mix until creamy. Add vanilla, bananas, and butter and mix well. Add the strawberries and mix on low until just combined. Add the flour mixture and beat on medium speed until well mixed, scraping down the sides at least once.
- Spray or grease a 4 x 8″ loaf pan well, pour in the batter and spread evenly in pan. Add sliced strawberries to the top of the batter if you like.
- Bake for 40 to 45 minutes at 350 degrees F, or until the sides will be just starting to pull away from the pan (toothpick should come out clean). Allow to rest in the pan for 10 minutes before removing to a wire rack to cool.
For the Cheddar Chive Bread:
- Preheat oven to 350 degrees F.
- Put Pamela’s Baking & Pancake Mix, sugar, salt and baking powder to a mixer and mix. Set aside. Add the water, eggs and canola oil to the dry, and mix for 3 minutes on high. Gently mix in the cheese and chives until just combined. Spray or grease a 4 x 8″ loaf pan well, pour in the batter and spread evenly in pan. Add extra chives to the top of the batter if you like.
- Bake in preheated 350° oven for 8 minutes. Slit the top of the loaf, lower heat to 325° and bake for 30-35 minutes. Let cool for at least 10 minutes before removing from the pan and resting on a wire rack. Use a serrated knife to slice loaf or freeze loaf before slicing.
