Leftover Turkey Soup is a quick and easy soup that uses your leftover Thanksgiving turkey and fresh chopped vegetables.
Thanksgiving is in two days. I can’t believe how fast this year has flown by and somehow we are already approaching the holidays. Things have been especially crazy around these parts with selling a house, moving and trying to buy a house. It has definitely been a stressful and not so fun process but I am trying to stay positive and look to the end result.
Needless to say I am looking forward to Thanksgiving so I can put my feet up and relax with family. I plan to do a little cooking with my Mom and then enjoy a good turkey dinner. Today’s recipe for Leftover Turkey Soup is perfect for all of that leftover turkey you might have. Some people like to make a stock out of the bones from the turkey which works great or you can use whatever broth you have on hand.
I like to make Leftover Turkey Soup the day after Thanksgiving because it gives me something light to eat after such a huge, filling meal.

Description
Leftover Turkey Soup is a quick and easy soup that uses your leftover Thanksgiving turkey and fresh chopped vegetables.
Ingredients
- 2 Tablespoon olive oil
- 3 celery stalks, chopped
- 3 carrots, chopped
- 2 garlic cloves, minced
- 1/2 sweet onion, chopped
- 1 teaspoon thyme
- 1 bay leaf
- 2 oz egg noodles (or noodle of choice)
- 2 cups leftover turkey, shredded or cubed
- 6 cups chicken broth
Instructions
- In a large pot heat olive oil over medium heat, add celery, carrots, garlic and onion and sauté until soft, about 6-8 minutes.
- Add the thyme, bay leaf, chicken broth and simmer for 30 minutes.
- Add the leftover turkey and simmer for 5 more minutes.
- Add egg noodles to each soup bowl and pour soup over the noodles. Garnish with fresh parsley.
