Lemon Cornmeal Cookies are light and sweet with a touch of lemon making these a nice addition to a brunch or special occasion.
I have a serious love for lemons. It extends beyond the occasional addition to water or iced tea, to things like cookies and pasta dishes. In Lebanese cooking we use a lot of lemons when making tabbouleh, hummus, fattoush and more. It has always been a main staple in my cooking. Isn’t everything just better with a squeeze of lemon? When I was creating these Lemon Cornmeal Cookies I knew that the lemon would be a great addition. These cookies are light, sweet and crispy around the edges while staying a bit soft in the middle. If you have ever had a muffin top from Panera these remind me of those.
If you have been hanging around A Cedar Spoon for any length of time you probably noticed I do not share a lot of baking and dessert recipes. I share an occasional cookie recipe but they are not the prominent recipes you will find here. To be honest I try not to have too much of that around my house because it is just too tempting.
But since we follow the 80/20 rule in my house there is some occasional indulging that goes on. I will never deprive my children of all the deliciousness the world has to offer! I mean come on, who doesn’t love a good cookie or bowl of ice cream. Cookies make their way into my hands from time to time and when they do I tend to go to my tried and true favorites, like Chewy Oatmeal Chocolate Chip Cookies or Loaded Oatmeal Cookies, but today’s Lemon Cornmeal Cookies are a nice change.
Through my partnership with P.A.N. we are showing people how versatile cornmeal can be in our everyday cooking. Last month I shared a recipe for Honey Cornbread Pancakes with Peaches which have become a favorite in my house. Today these Lemon Cornmeal Cookies are another creative way to use cornmeal that people might not think of.
Lemon Corn Meal Cookies are sweet and light, making these a good addition to your next brunch or special occasion. Once these cookies are done cooking and cool off, you can sprinkle then with extra lemon zest to give them a pop of color and maybe a little shake of powdered sugar. When it comes to recipe testing for sweets you know my household is on board 100%. My husband loved these cookies and could not stop eating them.

I love the texture of cornmeal. I would rather eat corn muffins than any other type of muffin. It's like tasty, buttery sand in my mouth! And you can make it sweet or savory! Lemon is the right flavor to add to these to make them bright and yummy! Great recipe!
