Mexican Turkey Lettuce Wraps

Mexican Turkey Lettuce Wraps can be made in under 20 minutes. If you like tacos this will be right up your alley but a lighter, slightly healthier version with the same flavor.



  • 1 head of Boston lettuce {Bibb lettuce}
  • 2 Tablespoons olive oil
  • 1 pound ground turkey, cooked
  • 1/4 sweet onion, chopped
  • 2 garlic cloves, chopped
  • 1/2 red pepper {or pepper of your choice}, seeds removed, chopped
  • 115oz can black beans, drained and rinsed
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper {cayenne pepper} {more or less depending on spiciness desired}
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup fresh cilantro, chopped
  • 3 green onions, chopped
  • Garnishes:
  • Additional cilantro
  • Salsa of your choice
  • Cheese
  • Sour cream or greek yogurt
  • Jalapeños, chopped


  1. In a large skillet heat the olive oil over medium high heat. Add the ground turkey and cook until browned, about 4-5 minutes {make sure you crumble it as it cooks}. Add the onion, garlic and red pepper and sauté for 4-5 minutes until the onion is soft.
  2. Stir in the black beans, cumin, paprika, red pepper {cayenne pepper} and chili powder and continue to cook for 3-4 more minutes.
  3. Remove from the heat and stir in the fresh chopped cilantro and chopped green onions and add salt and pepper to taste.
  4. Place a couple of spoonfuls of the turkey mixture into the center of the lettuce leaf. Garnish with salsa, cheese and sour cream or any garnishes you like. Enjoy!


Refrigerate the leftovers in an airtight container.[br]This also freezes well to use later for things like tacos, nachos, quesadilla, salads or lettuce wraps.[br]You can swap the turkey for ground beef if you would like.
