Oatmeal Scotchies are soft, chewy oatmeal cookies with butterscotch chips. These are a classic, favorite that will satisfy anyone’s sweet tooth.



  • 3/4 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup {2 sticks} butter, softened
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups quick cooking or old-fashioned oats
  • 1 2/3 cups butterscotch morsels {more or less depending on your likes}


  1. Preheat the oven to 375 degrees F.
  2. In a large mixing bowl combine the flour, baking soda, salt and cinnamon. Set aside.
  3. In a mixer beat together the butter, sugar, brown sugar until creamy. Add the eggs and vanilla and continue to beat until everything is combined.
  4. Slowly add the flour mixture until combined. Stir in the oats and butterscotch.
  5. Using a cookie spoon or Tablespoons drop rounded dough onto a cookie sheet. Bake for 9-10 minutes, remove to wire rack to cool.


For chewy cookies bake for 7-8 minutes. Keep in mind that all ovens vary so keep an eye on your cookies starting at about 7 minutes for the first batch to make sure they don’t get too crispy.

You can use all-purpose flour only if you don’t have whole wheat flour {use 1 1/4 cups all-purpose flour}.
