Description
Oatmeal Scotchies are soft, chewy oatmeal cookies with butterscotch chips. These are a classic, favorite that will satisfy anyone’s sweet tooth.

Ingredients
- 3/4 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup {2 sticks} butter, softened
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups quick cooking or old-fashioned oats
- 1 2/3 cups butterscotch morsels {more or less depending on your likes}
Instructions
- Preheat the oven to 375 degrees F.
- In a large mixing bowl combine the flour, baking soda, salt and cinnamon. Set aside.
- In a mixer beat together the butter, sugar, brown sugar until creamy. Add the eggs and vanilla and continue to beat until everything is combined.
- Slowly add the flour mixture until combined. Stir in the oats and butterscotch.
- Using a cookie spoon or Tablespoons drop rounded dough onto a cookie sheet. Bake for 9-10 minutes, remove to wire rack to cool.
Notes
For chewy cookies bake for 7-8 minutes. Keep in mind that all ovens vary so keep an eye on your cookies starting at about 7 minutes for the first batch to make sure they don’t get too crispy.
You can use all-purpose flour only if you don’t have whole wheat flour {use 1 1/4 cups all-purpose flour}.
