ONE POT CHEESY CHICKEN RED PEPPER PASTA 

Cheese is my weakness and with a husband from Wisconsin I am not the only one in my household that feels this way. If you open up my refrigerator you might just see a whole drawer dedicated to every kind of cheese imaginable. Today’s One Pot Cheesy Chicken Red Pepper Pasta is a favorite in my house and I love how easy it is. 

When I was given the opportunity to participate in the chopped at home challenge hosted by Sargento Cheese, I jumped at the chance because thinking up recipes involving cheese is something I can get behind. If you have watched the show you know it can get pretty intense trying to create a recipe in a set amount of time, with limited ingredients and being judged on it.

Luckily this challenge was in the comfort of my home so it was less stressful.  I did have three tough judges to impress and the verdict was a thumbs up from all of them {well maybe not Andrew} but by the clean plates I know he also liked the dish.

For this challenge I was given the following ingredients: Sargento® Chef Blends™ Shredded 6 Cheese Italian, boneless chicken breasts, Greek yogurt, and a red bell pepper. After a lot of back and forth on the type of recipe to create I landed on a one pot meal {a recent obsession of mine}.  

One Pot Cheesy Chicken Red Pepper Pasta is another one of my cheesy dinner creations using one pot and done in 30 minutes or less.  I like using greek yogurt and cheese because it creates a creamy, gooey sauce without all of the guilt that cream has.

One Pot Cheesy Chicken Red Pepper Pasta is ready in 30 minutes this cheesy chicken pasta dish has red peppers, spinach, creamy greek yogurt, spices and topped with freshly chopped parsley.

Ingredients

  • 4 Tablespoons olive oil, divided
  • 1 lb. boneless skinless chicken breasts, cubed
  • 1 red bell pepper, chopped
  • 1/4 sweet onion, chopped
  • 2 garlic cloves, minced
  • 14.5 oz can diced tomatoes, undrained
  • 2 1/2 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper {optional}
  • 8 oz. rotini pasta {or similar pasta size of your choice}
  • 2 cups fresh spinach, loosely packed
  • 2 cups Sargento® Chef Blends™ Shredded 6 Cheese Italian
  • 1/3 cup plain greek yogurt
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat 2 Tablespoons olive oil in a large pot over medium heat. Add the chicken along with a dash of salt and pepper and cook the chicken until brown and cooked through, about 5-7 minutes. Set the chicken aside in a bowl.
  2. In the same pot heat the remaining 2 Tablespoons olive oil over medium heat and sauté the onion, red bell pepper and garlic until soft.
  3. Add the diced tomatoes, chicken broth, oregano, basil, thyme, crushed red pepper {optional} and pasta and bring to a boil. Turn heat down to low, cover the pot and simmer for 15 minutes stirring occasionally.
  4. Add the spinach, cheese, chicken and Greek yogurt and stir to combine. Cover and continue to cook for 5 more minutes or until the pasta is fully cooked and the cheese is melted.
  5. Remove the cover and stir in fresh parsley.
  6. Serve the pasta with extra fresh cheese and crusty bread.
