One skillet pasta meals are my favorite. I love being able to put everything in one skillet and have a complete meal at the end. The icing on the cake is that you only dirty one skillet. Since I am the one doing the dishes in my house this is the way I like it. Today’s One Skillet Beef Taco Pasta takes your favorite taco fillings and mixes them with pasta and is topped with cheese and your favorite garnishes.

The beef mixed with taco seasoning and salsa gives you a mouth watering dish the whole family will love.

Recipe Ingredients

One Skillet Beef Taco Pasta Skillet

Here’s an overview of the simple ingredients we’re using. Jump to the recipe card below for exact ingredient amounts and printable instructions. 

  • Beef: Ground beef is used in this one pot taco pasta. You also can use ground turkey or ground chicken.
  • Vegetables: The vegetables in this are onion, corn and fire roasted diced tomatoes. You can use regular diced tomatoes in the place of the fire roasted tomatoes.
  • Seasoning: I like to use taco seasoning to flavor this. You also can use this Homemade Taco Seasoning Recipe.
  • Salsa: Salsa adds a great flavor to this pasta. You can use your favorite store-bought or you can make your own homemade salsa.
  • Pasta: A medium pasta works well in this dish. You can use any shape you like!

How do you Make this One Skillet Beef Taco Recipe

Step 1: Cook Beef: In a large skillet heat the 2 Tablespoons olive oil over medium heat. Add the onion and garlic and sauté for 2 minutes, or until the onion is soft. Add the ground beef and continue to cook, breaking up the ground beef with a large spoon, until the beef is browned.

Step 2: Add Other Ingredients: Add the taco seasoning, salsa, fire roasted tomatoes, corn, beef broth and pasta.

Step 3: Cook Pasta: Bring to a boil, cover and turn heat down to low and simmer for 10 to 12 minutes.

Step 4: Stir in Cheese: Remove the lid and add the cheese stirring to combine everything.

Remove the skillet from the heat and let sit for 1 to 2 minutes or until the cheese is melted. Serve the pasta in a bowl with your favorite garnishes. I like to add fresh tomatoes, cilantro, red onion and sour cream.

Storage Tips

Store the leftovers in an airtight container for up to 4 days. To reheat you can heat on the stove or in the microwave.

Ingredients 

  • 2 tablespoons olive oil
  • 1/2 sweet onion, chopped
  • 2 cloves garlic , minced
  • 1 pound Angus beef
  • 2 tablespoons taco seasoning
  • 1/2 cup salsa
  • 1 can fire roasted diced tomatoes
  • 1 can corn, drained and rinsed
  • 2 cups beef broth , {or broth of your choice}
  • 8 ounces pasta , {small to medium pastas work best}
  • 1 1/2 cups sharp cheddar cheese
  • Cherry tomatoes, cut in half
  • Red onion, diced
  • 2 tablespoons olive oil

Instructions 

  • In a large skillet heat the 2 Tablespoons olive oil over medium heat. Add the onion and garlic and sauté for 2 minutes, or until the onion is soft.
  • Add the ground beef and continue to cook, breaking up the ground beef with a large spoon, until the beef is browned.
  • Add the taco seasoning, salsa, fire roasted tomatoes, corn, beef broth and pasta.
  • Bring to a boil, cover and turn heat down to low and simmer for 10 to 12 minutes. Remove the lid and add the cheese stirring to combine everything.
  • Remove the skillet from the heat and let sit for 1 to 2 minutes or until the cheese is melted. Serve the pasta in a bowl with your favorite garnishes. I like to add fresh tomatoes, cilantro, red onion and sour cream.

Notes

  • Feel free to use regular diced tomatoes instead of the fire roasted tomatoes.
  • When it comes to the pasta you can use whatever you want but I think the small to medium pastas work best.
  • I like to use sharp cheddar cheese but you can also use a mixture of your favorite–pepper jack adds a little spice.
