Overnight Refrigerator Strawberry Banana Coconut Steel Cut Oatmeal is made overnight in a glass jar and is waiting for you when you wake up. Healthy, full of flavor and filling this makes the perfect start to your day or even a snack mid-day.

Ingredients

  • 1/2 cup Bob’s Red Mill steel cut oats
  • 1/2 cup coconut milk {or milk of your choice}
  • 1/3 cup low fat yogurt
  • 1 teaspoon honey
  • 1 teaspoon vanilla
  • 1/2 banana, chopped
  • Garnish:
  • Fresh strawberries

Instructions

  1. In a mason jar or glass jar of your choice combine the steel cut oats, coconut milk, yogurt, honey and vanilla. Close the jar and refrigerate overnight.
  2. When you are ready to eat, stir in the bananas, another drizzle of honey and the strawberries..

Notes

Steel cut oats can be a bit chewy and some people do not like that texture. If you prefer a softer texture then you can add an extra 1/4 cup of milk and microwave them for 1 1/2 minutes or until they become softer.
