Peanut Butter Banana Muffins

This pregnancy I have had major peanut butter cravings. That’s not a bad thing, right? My kids love peanut butter too, so it works out nicely. They love it on apples, on toast, in sandwiches, smoothies, energy bitesdesserts and muffins, like these Peanut Butter Banana Muffins.

Can you blame them?

These muffins are addictive…and I don’t just say that because I am pregnant. They are also a healthier version of a lot of peanut butter muffins you see out there, which is a plus in my book.  These muffins mix together Justin’s Honey Peanut Butter , bananas, Stonyfield Greek Yogurt  and honey to create a soft, flavorful muffin. I like to add dark chocolate chips to these muffins, but that is optional. They taste great without them too.

If you haven’t tried using Greek yogurt {or plain yogurt} in muffins, you should give it a try. Not only does it add calcium, protein, it helps to create a softer muffin. These muffins also use Justin’s Honey Peanut Butter, which is creamy with a hint of sweetness. If you aren’t familiar with Justin’s, you should be! It is one of my favorite nut butter brands out there.

As a vegetarian living an active lifestyle, Justin was on a mission to create something better. Given that nut butter was a staple in his diet, plain old peanut butter just wasn’t cutting it. He dreamt up his own flavors and an assortment of experimental nut butters began to fill his cabinets. After weeks of hungry roommates stealing his tasty creations, Justin decided to write his name on the jar – and that’s where the real story begins. Justin’s now has a variety of flavored almond butters, peanut butters and sweet treats, like their delicious peanut butter cups that I can’t get enough of.

As we head back to school this fall these Peanut Butter Banana Muffins would be the perfect after-school snack to have ready for the kids. They pack a protein and calcium into one delicious muffin. The kids will go crazy for these, but save a few for the adults too.

Ingredients

  • 1 cup whole wheat pastry flour
  • 1/2 cup all purpose flour
  • 1 1/2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 very ripe medium bananas, mashed
  • 1/2 cup honey
  • 1/2 cup Stonyfield Greek Yogurt
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 cup Justin’s honey peanut butter
  • 1/2 cup dark chocolate chips {optional}

Instructions

  1. Preheat the oven to 350 degrees F. Line a muffin pan with paper liners and set aside.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon and salt and set aside.
  3. Peel the bananas and place in the bowl of a stand mixer. Mix until the bananas are mashed. Add the honey, yogurt and vanilla and beat on medium until combined. Place the mashed bananas in the bowl of a stand mixer. Add the honey, yogurt and vanilla and beat until combined. Add in the peanut butter and beat until the batter is smooth. Slowly add the flour mixture and mix until just combined. If you are using chocolate chips stir them in gently.
  4. Fill muffin liners three-quarters full. Add a few chocolate chips to the top of each muffin if you like. Bake for 20-22 minutes, or until toothpick inserted into center comes out clean. Remove from the oven and let sit for 5 minutes. Transfer to a wire rack to finish cooling.
  5. Store, covered, at room temperature for up to 4 days.

Notes

You can use almond butter or any other nut butter for these.

I used a combination of whole wheat flour and all-purpose but you can use only all-purpose if you like in place of the whole wheat flour.

I like to add chocolate chips to my muffins but that is optional. They taste great without them!

The nutritional information does not include the chocolate chips.

I can’t wait to try this. My mouth started salivating by seeing this only. Cookies are my favorite and any type of cakes is great for me. I love to try different types of cakes and this is kind of different one which I haven’t tried yet. So I’m definitely going to try this soon and will definitely let you know, how it turned out.
