Salsa Verde Avocado Turkey Lettuce Wraps come together in under 20 minutes and are a low carb way to enjoy your favorite Mexican food. Salsa verde, ground turkey, onion, green pepper and spices combine to make this a flavorful lettuce wrap filling topped with fresh cilantro and avocado.

  • 1 head of Boston lettuce {Bibb lettuce}
  • 2 Tablespoons olive oil
  • 1 pound ground turkey, cooked
  • 1/4 large sweet onion, chopped {about 3/4 cup}
  • 3 garlic cloves, minced
  • 1/2 green pepper, seeds removed, chopped
  • 1 Jalapeño, seeds removed, chopped {optional for spice}
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1 teaspoon cumin
  • 1/3 cup fresh cilantro, chopped
  • 1 1/4 cup Salsa Verde {either homemade or your favorite brand}
  • Garnish:
  • Cilantro, freshly chopped
  • 1 avocado, chopped
  • Fresh tomatoes, chopped
  • Green onion, chopped

  1. In a large skillet heat the olive oil over medium high heat. Add the ground turkey and cook until browned, about 4-5 minutes {make sure you crumble it as it cooks}. Add the onion, garlic, green pepper, jalapeño, chili powder, paprika, cumin and sauté until onion is soft.
  2. Add the salsa verde and fresh cilantro and simmer on low heat for 2 more minutes.
  3. Remove from the heat and put in a serving bowl.
  4. When you are ready to serve the turkey lettuce wraps place a couple of spoonfuls of the turkey mixture into the center of the lettuce leaf. Garnish with extra salsa, fresh cilantro, fresh tomatoes, green onion and fresh avocado. Enjoy!
