Sausage, Tomato, and Arugula Fettuccine Recipe
Before I get to the delicious Sausage, Tomato, and Arugula Fettuccine recipe I have for you today – Happy Halloween! Stay safe and I hope those kiddos have fun running around in their cute (or maybe scary) costumes.
We just got back from our trip to Tennessee. Hopefully sometime this week I will share some of the beautiful scenery from our trip. Until then here are a few of my favorites..just breathtaking!
This is the creeper trail that we did in Virginia. The leaves were starting to fall off of the trees but it was still pretty.
Great 18 mile bike ride through nature…that took us to this spot. I mean is that real? Yes it is!
And this was the drive from Johnson City, TN to Asheville, NC. I just love the views you get as you go up and down the mountains.
Needless to say after our 11 hour driving I came home and didn’t want to do a lot of complicated cooking last night and won’t want to tonight either. That brings us to Wednesday, which seems to have become my quick and easy meal day.
This Sausage, Tomato, and Arugula Fettuccine falls right into this category. I am on an arugula kick lately..just so tasty!
Sausage, Tomato, and Arugula Fettuccine Recipe
Every week when Wednesday rolls around I have no energy to make a big, complicated meal for dinner. I love Cooking Light for their healthy, easy dinner options. I always go through the magazines and make a folder of recipes just for this occasion.
This Sausage, Tomato, and Arugula Fettuccine is another one of those easy pasta recipes that doesn’t take a lot of ingredients (similar to this Penne with Turkey Sausage, Garlic and Broccoli I made last week) and can be made in under 15 minutes. It was so easy to make and tasted great. We even had some leftovers to bring to work for lunch- always a bonus!

Description
Quick and easy pasta dish, great for a busy weeknight meal.
Ingredients
- 1 (9-ounce) package of fettuccine
- 1 tablespoon olive oil
- 6 ounces Italian turkey sausage
- 2 teaspoons minced garlic
- 1 pint of cherry tomatoes
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 cups baby arugula leaves
- 2 ounces pecorino Romano cheese, freshly grated
Instructions
- Cook pasta according to the package. Drain in colander over a bowl, reserving 2/3 cup cooking liquid.
- While the pasta cooks, heat oil in large skillet over medium-high heat. Remove casings from sausage and break into pieces, add to pan. Cook 3 minutes or until browned, stirring frequently.
- Add garlic and cook 30 seconds, stirring constantly. Add tomatoes, salt and pepper, cover and cook 2 minutes mashing tomatoes with the wooden spoon to break them up.
- Cover pan and reduce heat to low, cook 3 minutes.
- Remove the skillet from heat. Add pasta, reserved 2/3 cooking liquid, and arugula, toss well.
- Sprinkle with fresh pecorino Romano cheese and serve.
