Slow Cooker Chipotle Beef Chili is a low maintenance meal that is perfect for cold days, watching sports or lunches during the week. The chipotle chili powder mixed with spicy jalapeños make this an extra flavorful chili. This meal is freezer friendly so make extra and save some for later.

I feel guilty posting this chili recipe as I enjoy sunny Florida but it is tooooo good not to share. At the moment my mind is not in a cold place, or bowls of chili but I know a lot of the country is still freezing. So this one is for you.

Slow Cooker Chipotle Beef Chili is Mike’s new favorite chili.  We do a lot of chili in the fall and winter around my house. Usually I make vegetarian or turkey chili recipes because I like a lighter chili but Mike begs to differ.  He likes his chili with beef and beans and corn– nice and hearty! When Mike said this was the best chili I have made to date I got excited. We have a winner here and one that I know I will be making time and time again. You can hit that pin button now. 😉

What I think takes this recipe to the next level is the chipotle chili powder.  I like the smoky flavor it adds which goes nicely in chili.  If you aren’t a fan of it you can definitely leave it out.

When this chili simmers in your house you are going to be waiting by the slow cooker for it to be done and ready to eat.  We like to have all of the garnishes waiting. Sour cream + cheese + avocados + cilantro + green onions + red onion.  The list goes on.

Slow Cooker Chipotle Beef Chili is a low maintenance meal that is perfect for cold days, watching sports or lunches during the week. The chipotle chili powder mixed with spicy jalapeños make this an extra flavorful chili. This meal is freezer friendly so make extra and save some for later.

Ingredients

  • 1 lb. ground beef, cooked, fat drained
  • 1-15.5 oz can of corn, drained and rinsed
  • 1-15.5 oz can of dark red kidney beans, drained and rinsed
  • 1-15.5 oz can of black beans, drained and rinsed
  • 1-15.5 oz can of cannelini beans, drained and rinsed
  • 2-14.5 oz cans of diced tomatoes
  • 1/2 sweet onion, chopped
  • 2 garlic cloves, minced
  • 1 green pepper, chopped
  • 2 jalapeño, seeds removed, chopped {optional for spice}
  • 1 carrot, peeled and chopped
  • 2 Tablespoon chili powder
  • 1/2 teaspoon chipotle chili powder {more depending on the amount of chipotle flavor you want}
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper
  • 2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Garnish:

  • Fresh cilantro, chopped
  • Cheese
  • Sour cream or greek yogurt
  • Green onions, chopped
  • Fresh jalapeños, chopped
  • Avocado
  • Red onion, chopped

Instructions

  1. Cook meat until browned and drain. Add the ground beef to the slow cooker with all remaining ingredients and stir.
  2. Cover with lid and cook on low for 5 hours or on high for 3-4 hours.
  3. Add salt and pepper to taste. Serve warm with garnishes of your choice.

Notes

You can use more or less of the jalapeños and the chipotle chili powder depending on your tastes.
