Ingredients

For the chili:

  • 1 lb. ground turkey
  • 1/2 sweet onion, chopped
  • 4 garlic cloves, minced
  • 4 oz. diced chiles
  • 115 oz. can of diced tomatoes
  • 115 oz. can of black beans, drained and rinsed
  • 115 oz. can of hominy, drained and rinsed
  • 2 Tablespoons tomato paste
  • 1 teaspoon cocoa powder
  • 2 Tablespoons chili powder
  • 2 teaspoon cumin
  • 1 teaspoon coriander
  • 1/4 teaspoon cayenne pepper {optional}
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 2 cups quinoa, cooked

Garnishes:

  • Cilantro
  • Cheese
  • Sour Cream
  • Green Onion

Instructions

  1. Cook the ground turkey in a media skillet over medium heat until the turkey is golden brown and cooked through. Add it to the slow cooker along with all of the other ingredients.
  2. Cook on low for 4 hours.
  3. While the chili cooks, cook the quinoa according to the package.
  4. When the chili is ready to serve put a scoop of quinoa in the bottom of a bowl and top with chili and your favorite garnishes like cilantro, cheese, sour cream and green onion.

Notes

This chili freezes nicely. I would freeze it without the quinoa in it and just make the quinoa when you are ready to eat the chili.

You can use beef in this recipe or leave the meat out all together.

Try a different variety of beans like red kidney beans and chickpeas.
