Spanish Sliders with Roasted Red Pepper Yogurt Sauce

Spanish Sliders with Roasted Red Pepper Yogurt Sauce make a great summer meal or addition to your backyard soiree with your friends and family.  These beef sliders are mixed with roasted red peppers, paprika and a dash of cayenne pepper, put on a slider bun and topped with a flavorful roasted red pepper yogurt sauce.

As you can probably see from my last post and now this one, grilling season is in full swing at my house.  

Part of what I love most about grilling is that I don’t have to do a lot of cleanup after the meal and the flavor that the grill brings to the food. 

Saturday and Sunday nights are our favorite for grilling because we can hang out as a family or with friends on our back patio, the kids can play and we can sip on our favorite wine while grilling.


Ribera Del Duero y Rueda Spanish Wines

Spanish wines happen to be among my favorite.  

When I was in college I spent a summer in Barcelona, Spain and fell in love with the food and drinks.  

Nothing beats a plate of tapas and a glass of Spanish wine.  

When I was there I fell in love with tempranillos and the bold, ripe flavors that you get when you take a sip.

When creating today’s Spanish Sliders with Roasted Red Pepper Yogurt Suace I had a feeling they would pair well with Ribera Y Rueda’s Rueda Verdejo {white grape varietal} and Ribera del Duero Tempranillo {red grape varietal}.  

The sliders are a mixture of beef, paprika, cayenne pepper and roasted red peppers and the flavors work well together and the roasted red pepper yogurt sauce adds a little extra flavor to the sliders.

When we were putting these sliders together and grilling them we sipped on the Rueda Verdejo , which is a bright, crisp and creative wine along with some cheese and crackers.

 If you are in the backyard on a hot day this is the wine you will want to sit down and relax with.

When we were eating the Spanish Sliders we paired them with the Ribera del Duero Tempranillo .  

The bold flavor of the tempranillo worked well with the roasted red pepper flavor and the spices.  I will admit that I am picky with my wines and I really enjoyed both of these.

With an extreme climate perfectly suited for quality grape-growing and ripening, Ribera del Duero wines represent the pinnacle of Spanish winemaking and the ultimate expression of Spain’s most noble red grape: Tempranillo.

The favorite white wine of Spain, Rueda wines, are crisp, food-friendly, accessible and versatile.

Situated on a high plateau with a continental climate, Rueda has long cold winters, short springs and hot summers.

High elevations and gravelly stone soils allow the late-maturing Verdejo to develop deep aromas and flavors resulting in dry, fresh wines with great character.

Spanish Sliders with Roasted Red Pepper Yogurt Sauce make a great summer meal or addition to your backyard soiree with your friends and family. These beef sliders are mixed with roasted red peppers, paprika and a dash of cayenne pepper, put on a slider bun and topped with a flavorful roasted red pepper sauce.

Ingredients

For the Spanish Sliders:

  • 1 lb. ground beef {we use 80/20}
  • 1 Tablespoon yellow mustard
  • 1/2 teaspoon paprika
  • 1/4 cup roasted red pepper, finely chopped
  • 1/4 teaspoon red pepper {cayenne}
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • Dash of pepper
  • Sliders buns of your choice {I used Kind's Hawaiian}
  • Lettuce for garnish

For the Roasted Red Pepper Yogurt Sauce:

  • 1/2 cup low fat plan yogurt
  • 2 teaspoon extra virgin olive oil
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon paprika
  • 1 garlic clove, minced
  • 1/4 cup roasted red peppers, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your grill.
  2. In a large bowl combine the ground beef, yellow mustard, paprika, roasted red peppers, cayenne red pepper, minced garlic, salt and pepper. Using your hands mix the ground beef mixture until fully combined.
  3. Shape the ground beef mixture into 2 inch patties {about 1/4 cup of meat per slider which makes 8 sliders}.
  4. Place the sliders on the grill and let cook for 4-5 minutes, flip them over, and cook for 4-5 more minutes or until they reach your desired doneness. We cook ours to medium-rare which is an internal temperature of 130-135 F.
  5. While the sliders are grilling create the roasted red pepper yogurt sauce. Using a medium mixing bowl mix together the yogurt, extra virgin olive oil, lemon juice, paprika, minced garlic and roasted red peppers. Add salt and pepper to taste. Refrigerate the yogurt sauce until ready to serve sliders.
  6. Once the sliders are done grilling place them on the buns followed by a small slice of lettuce and the roasted red pepper yogurt sauce. Enjoy!

Haha! I love that. I had so many cravings when I was pregnant. The nice thing is you are pregnant so that gives you the excuse to eat whatever you want and blame it on the baby! ;) Let me know if you try these and if you like them. When you are done being pregnant we can sip on this wine together--you would love it!

I just love the sound of this sauce!! I love to slather my burgers in sauce and this one sounds so healthy but so tasty. Can't wait to try it!!

I like to use sauce on my burgers too! I think it adds that extra touch of flavor which I love. Yogurt makes a great sauce because it keeps it healthier.
