Strawberry Banana Coconut Creamsicles

Strawberry Banana Coconut Creamsicles are a summer treat that the whole family can enjoy.  These popsicles use bananas, Strawberry TruMoo Milk, shredded coconut and honey to create the perfect mid-day snack or after dinner treat.

I love summer and everything that comes with it.  Farmers markets, backyard BBQs, days at the pool and of course popsicles to help the kids {and adults} cool off. These Strawberry Banana Coconut Creamsicles are the perfect summer snack or treat that everyone will love.  These are healthy, and something the kids will enjoy.

My son goes crazy for popsicles in the summer months and thinks of them as a treat.  The nice thing about them is that while they might seem like a treat, they can still have healthy ingredients in them.  A win-win.  Popsicles, like these Strawberry Banana Coconut Creamsicles, are a great snack that you can easily make at home with a few ingredients, a popsicle mold {or you can even use dixie cups and popsicle sticks} and a little bit of patience while they freeze.  I make these during nap time so my son doesn’t know and then surprise him during play time.  The look in his eyes goes something like this….

When creating these popsicles I used TruMoo Strawberry Milk which I blended with bananas, shredded coconut, honey and vanilla extract.  TruMoo Strawberry Milk has no artificial growth hormones, high fructose corn syrup and it is fresh from your trusted dairy which makes it a great option for popsicles. Finding the right balance between happy and healthy is never easy. That’s why there’s TruMoo.  It gives the kids a dose of calcium while still giving them something a little sweet and enjoyable.

These Strawberry Banana Coconut Creamsicles are a nice balance of sweet, creamy and fruity with each popsicle having calcium from the milk and potassium from the bananas.  I like to make a batch of popsicles every few weeks to have on hand when the neighbor kids are over playing.

Summer is my favorite time of year, and creamy, fruity popsicles are definitely one reason.

Description

Strawberry Banana Coconut Creamsicles are a summer treat that the whole family can enjoy. These popsicles use bananas, Strawberry TruMoo Milk, shredded coconut and honey to create the perfect mid-day snack or after dinner treat.

Ingredients

  • 114 oz. container of TruMoo Strawberry Milk
  • 2 large bananas, peeled
  • 1 cup of shredded coconut, split in half {I used unsweetened but you can use sweetened}
  • 1 teaspoon honey
  • 1 teaspoon vanilla extract

Instructions

  1. In a large blender combine all ingredients {make sure to only use 1/2 cup of the shredded coconut}. Blend the ingredients until smooth, taste and adjust with more honey for sweetness.
  2. Put a small sprinkle of shredded coconut on the bottom of each popsicle mold, pour a layer of the strawberry banana cream mixture, add another layer of coconut, another layer of the strawberry cream mixture and end with another sprinkle of shredded coconut {make sure to only fill your popsicle molds up about 3/4 of the way as they expand a bit when they freeze}.
  3. Place the popsicle mold in the freezer for 7 hours or overnight. Enjoy!

Notes

Popsicles molds are different but for mine it made 10 popsicles.
