Description

Strawberry Mint Mascarpone Crostini with Lemon Honey Drizzle are simple, sweet and elegant. They make the perfect appetizer for a party, shower or brunch and are just waiting to be on your spring menu.

Ingredients

  • 1 french baguette, cut into 1/4 inch thick slices {about 2530 pieces}
  • 3 Tablespoons extra virgin olive oil {more or less depending on how much you spread on the bread}
  • 8oz. mascarpone cheese
  • 6 large strawberries, thinly sliced {about 1 1/2 cups sliced strawberries}
  • 1/3 cup loosely packed mint leaves, chopped
  • 2 Tablespoons honey {you could need more or less depending on how much honey you want on top}
  • 1/2 lemon, zested

Instructions

  1. Preheat oven to 350 degrees.
  2. Arrange the baguette slices in one layer on two baking sheets. Put the olive oil in a small bowl and use a pastry brush to spread the olive oil over each slice of baguette. Bake the baguette slices in the oven for 20 minutes, or until just golden brown {you want them crispy but not too crispy or brown}.
  3. Remove the baguette from the oven and let cool for 15 minutes.
  4. Once cool spread the mascarpone in a thin layer on each baguette slice. Place two strawberry slices on each baguette. Garnish with the freshly chopped mint, a drizzle of honey and the lemon zest.
