Mixed Berry Salad with Strawberry Vinaigrette is a quick, fresh summer salad that is perfect for entertaining.  Spinach is mixed with fresh summer fruit, feta cheese, pecans and a light strawberry vinaigrette.

August is here. That means you still have a good month left of summer entertaining. Today’s Mixed Berry Salad with Strawberry Vinaigrette is one to keep on hand this summer when you are planning your party or summer brunch.

When the weather is hot and you want to be outside enjoying the day, the last thing you need to do is make complicated salads and dishes to serve your guests. Am I right, or am I right? The thing I love most about today’s salad is that it uses fresh summer ingredients like raspberries, strawberries and nectarines and can be thrown together in under 15 minutes.  The strawberry vinaigrette is light and fruity making it the perfect dressing for this salad.

Today along with this summery Mixed Berry Salad with Strawberry Vinaigrette I want to share a little about the perfect pairing for your salad– quiche from La Terra Fina .  If you are one of those people who dreads turning on the oven and heating up the house during those hot summer months, this is the brunch or summer entertaining staple for you.  This quiche is made with egg whites, no artificial colors or flavors {this makes me happy!}, 10+ grams of protein per serving and they come in a variety of flavors including Cheesy Cheddar and Broccoli, and my favorite pictured below the Spinach & Artichoke Flortentine Quiche.  The crust on these quiches is buttery and flaky, just the way I like it.

I made these quiches on two occasions, the first being when my mother in law was visiting from Florida and both times I paired it with today’s salad.  I think the fruity, light salad pairs really well with the cheesy, flavorful quiche.  My mother in law, husband, toddler and I all loved the quiches.  We have eaten these quiches for brunch as well as dinner, both are great options.

The quiches heat up in the oven in 25 minutes, which gives you just enough time to put together the Mixed Berry Salad with Strawberry Vinaigrette and prep the rest of your meal before your guests arrive.  Summer should be stress free, which means these quiches and this simple Mixed Berry Spinach Salad with Strawberry Vinaigrette is the answer for your next get together.

Mixed Berry Salad with Strawberry Vinaigrette is a quick, fresh summer salad that is perfect for summer entertaining. Spinach is mixed with fresh summer fruit, feta cheese, pecans and a light strawberry vinaigrette.

Ingredients

  • For the salad:
  • 6 oz baby spinach, rinsed
  • 1 nectarine, seed removed, sliced
  • 6 oz. fresh raspberries, rinsed
  • 1 cup fresh strawberries, sliced
  • 1/4 cup feta cheese, crumbled
  • 3/4 cup pecans, halved
  • Strawberry Vinaigrette:
  • 1/4 cup water
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/2 lb fresh strawberries, hulled and halved
  • 2 Tablespoons honey

Instructions

  1. In a large salad bowl put the spinach and layer the nectarine, raspberries, strawberry and feta cheese. Set aside.
  2. In a blender blend the water, extra virgin olive oil, red wine vinegar, strawberries and honey until smooth. Taste and adjust honey to taste.
  3. Pour half of the dressing over the salad and toss to combine everything.
  4. Top the salad with pecans and enjoy!

Notes

The salad dressing recipe makes a good amount of dressing. I start by using half the dressing and if you need more you can go from there.

I love all the fresh fruit in this salad combined with the pecans and feta cheese, it sounds wonderful! Those quiches sound great too, such a nice option for easy summer entertaining..
