WARM POTATO BACON SALAD

The month of New Years Resolutions, healthy eating and resetting our eating goals for the year. I am here with a hearty and healthy recipe to add to your menu. This Warm Potato Bacon Salad is the perfect side dish to your meal or lunch during the week.
I don’t know about you but I love warm salads in the winter. A couple of months ago I shared this Cauliflower Pepper Potato Salad that is also a warm salad. These types of salads make me feel cozy and my stomach happy. When creating this recipes I tried both white potatoes and red potatoes and liked the red potatoes the most. You can use whatever type of potato you want-they all work great! I like my potatoes slightly crispy which pairs nicely with the crispy bacon–a match made in heaven.
Today’s recipe uses Sweet Earth Benevolent Bacon . When I learned about their line of products, I was very excited to share it with you guys! They offer a wide variety of products including breakfast burritos, breakfast meats, veggie burgers, artisan bowls and more.
Their bacon has 75% less fat than pork bacon, 57% fewer calories than pork bacon and only 120mg of sodium. It has 10G of protein, no cholesterol and only 90 calories. You can find it in the refrigerated or freezer section of your local grocery store. I found it at my local Heinens in the refrigerated section. It is perfect for vegans, vegetarians or those that are trying to slim down their recipes in 2017!
The bacon is easy to prepare and makes a great addition to this Warm Potato Bacon Salad or part of your breakfast. When preparing your Sweet Earth Benevolent Bacon you should use an electric skillet set to 375° F. Allow skillet to come to temp and lightly oil with cooking oil (not spray).
Cook Benevolent Bacon for 2-3 minutes per side, turning only once. As it cooks, periodically check the underside and look for discoloration and a dryer overall appearance. The color will become a darker red and may even begin to have some dark brown/black spots or edges. Turn and repeat for the remaining side. Remove from skillet and set aside to cool. Benevolent Bacon will also continue to become crisper as it dries/cools.
