The night before you are going to make these put your steel cut oats in a container with a lid and cover with water {cover with about 1/2 an inch of water}. Cover and refrigerate for 12 hours. When you are ready to use the steel cut oats drain any excess liquid.
In another large bowl beat the two eggs. Whisk in the Greek yogurt, applesauce, honey, vanilla, milk and coconut oil. Stir the oats mixture into the egg mixture until well combined. Add the apples and dried cranberries and stir until the apples are mixed in.
