• vegetable broth or chicken broth • dry quinoa • chickpeas • red onion • english cucumber • mint leaves • fresh parsley • dill • salted pistachios • feta cheese • salt and pepper For the dressing: • extra virgin olive oil • lemon juice and zest • honey • salt & pepper • sumar or za'atar (optional)
