Mediterranean Baked Pork Tenderloin is tender, juicy and full of flavors from the Mediterranean. Pork tenderloin is rubbed with a warm Mediterranean spice mixture and baked to perfection. This is an easy weeknight meal the whole family will love!
2small pork tenderloins or 1 large pork tenderloin {about 2 pounds of pork tenderloin}
1garlic clovechopped into 6 small pieces
Salt
Pepper
Mediterranean Spice Mix :
1teaspooncoriander
1teaspooncumin
1teaspooncinnamon
1/2teaspoonallspice
1/4teaspooncloves
1teaspoonoregano
1/4teaspooncayenne red pepper {optional for spice}
Garnish:
Fresh Parsley
Instructions
Preheat oven to 375 degrees F.
In a small bowl combine the coriander, cumin, cinnamon, allspice, cloves, oregano and cayenne pepper and stir. Set aside.
Place pork tenderloin on a large cutting board. Trim the pork tenderloin by removing any silver skin.
Cut 3 slits into each pork tenderloin using a sharp knife and insert the small piece of chopped garlic into each slit, making sure to push the garlic into the slit.
Using your hands rub the Mediterranean spice mixture over each pork tenderloin on both sides. Sprinkle lightly with salt and pepper on all sides.
Put the pork tenderloin in a large baking dish Bake the tenderloin at 375 degrees F for 30-35 minutes, or until the meat thermometer registers 145 degrees F at the thickest part of the pork {there should be a blush of pink in the pork}. Remove from the oven and allow to rest for 2-3 minutes. Slice the pork tenderloin in thin cuts and serve with fresh parsley.
Notes
There should be a blush of pink in the pork. This is a good thing and ensures that the pork is tender and juicy!
You can also cut up pieces of bay leaves and tuck those into the pork similar to the garlic. Just cut a few slices into the pork and put the pieces of bay leaves in to the slit. You can pull them out when you are ready to eat the pork.
