Peaches and Cream Baked Oatmeal mixes oats and sweet peaches that are baked together in this hearty and comforting breakfast dish. The dish is so tasty, you might think it is dessert! You can substitute other fruits for the peaches--like bananas or berries. Serve it alone, or top it with milk or Greek yogurt. A family favorite and kid-friendly.

Ingredients
2 1/4cupsold fashioned rolled oats
2Tablespoonsplus 2 teaspoons coconut sugar or brown sugardivided
1teaspoonbaking powder
1/2teaspooncinnamon plus extra for garnish
1/4teaspoonsalt
2cupsmilk
1large egg
2Tablespoonsmaple syrup
2Tablespoonsmelted coconut oil or unsalted butter
1teaspoonvanilla extract
12ounces{about 2 cups} diced peachesplus a few slices of peaches for garnish
Instructions
Preheat the oven to 350 degrees F. Spray an 8x8- inch baking dish with cooking spray. Mix the oats, 2 Tablespoons sugar, baking powder, cinnamon, and salt together in a medium bowl. Whisk the milk, egg, maple syrup, coconut oil, and vanilla together in another bowl.
Scatter the diced peaches in the bottom of the prepared baking dish. Pour the oat mixture evenly on top. Pour the milk mixture on top and press to submerge all of the dry ingredients in the liquid. Arrange the peach slices on top and sprinkle with the remaining 2 teaspoons sugar and a pinch of cinnamon.
Bake for 35-40 minutes, until set. Let rest for 10 minutes before serving. Serve the oatmeal alone or top it with milk, Greek Yogurt or maple syrup.
Notes
You can use a variety of fruit: berries, bananas or mango would be great!
