In a large skillet heat 2 Tablespoons olive oil over medium high heat. Add the ground beef and sauté until browned and then drain the beef.
Add 1 Tablespoons of olive oil and sauté the garlic and onion for 2 minutes. Add back in the ground beef.
Pour in the sauce, diced tomatoes, cottage cheese and add the broken noodles. Make sure the noodles are under the sauce completely so they can cook evenly.
Cover and simmer for 20-25 minutes, or until the noodles are completely cooked. Sometimes the sauce cooks down too quickly and you may want to add a small amount of water half way through cooking.
Add dollops of the ricotta cheese around the skillet and top with mozzarella cheese and the fresh herbs.
