Ingredients

English cucumber
seedless, thinly sliced into strips

package goat cheese

Greek yogurt

4-6 ounce
small package smoked salmon

teaspoon
chives
minced or dried
Instructions
Use a slicer or a knife to thinly slice cucumber into long strips.
Chop salmon into small chunks. Save 8 small pieces to add on top of the cucumber roll-ups.
Mix the goat cheese, Greek yogurt, salmon, and 1/2 teaspoon chives.
Lay out a slice of cucumber and spread a thin layer of cheese mixture down the middle.
Roll up cucumber and secure with a toothpick.
Place a piece of salmon on top. Sprinkle with a few chives.
Notes
You could use cream cheese in place of the goat cheese.
