Ingredients
For the dressing:
3/4cupplain Greek yogurt
1Tablespoonhoney {more to taste}
1limejuiced
1/4teaspoonsalt
1/8teaspoonpepper
1/4teaspoongarlic powder
1/4teaspooncayenne red pepper {optional}
For the chicken salad:
3cupsshredded chicken {about 1 1/2 pounds}
1 1/2cuppineapplediced
1cupBee Sweet Citrus – Mandarinspeeled, sliced in half
1/2cupSunMaid raisins
1 1/2cupsSun World® Grapessliced in half
1/4cuppecans or silvered almonds {optional}
1carrotthinly sliced
2green onionsgreen parts chopped
1/4cupfresh parsley or cilantrochopped
1/4cupcoconutshredded {optional}
Instructions
In a large medium bowl combine the Greek yogurt, honey, salt, pepper, garlic powder, cayenne red pepper and stir well. Set aside.
In a large mixing bowl combine the chicken, pineapple, mandarins, raisins, grapes, nuts, carrots, green onions, parsley or cilantro and coconut and stir well. Add the Greek yogurt dressing in and stir until until the chicken salad is coated in the dressing.
Serve on lettuce wraps, sandwiches or rolls or eat on its own.
