Ingredients

olive oil

sweet onion
chopped

garlic cloves
minced

green pepper
seeds removed, chopped

carrots
peeled and chopped

pound
ground turkey
1-15
ounce
can of white beans
drained and rinsed (I used Great Northern)
1-15
ounce
can of black beans
drained and rinsed
2-14.5
ounce
cans of diced tomatoes
1-15
ounce
can corn
drained and rinsed
1-15
ounce
can tomato sauce

tablespoons
chili powder
1
teaspoon
paprika
1/2
teaspoon
red pepper

teaspoons
cumin
1/2
teaspoon
oregano
Salt and pepper to taste
Instructions
Heat olive oil in a large pot and brown the turkey. Add the onion, garlic, green peppers and carrots and sauté until tender.
Add the white beans, black beans, diced tomatoes, corn, tomato sauce, chili powder, paprika, red pepper, cumin and oregano and stir to combine.
Bring the chili to a boil. Reduce to a simmer, cover and cook for 20 minutes stirring occasionally.
Add salt and pepper to taste and serve in soup bowls with garnishes (cheese, green onions, sour cream, cilantro).
