Baba Ghanoush is a light, healthy dip made from roasted eggplant, tahini, lemon juice, garlic and olive oil. This is a Mediterranean favorite and perfect with pita bread or vegetables.

INGREDIENTS

• eggplant • extra-virgin olive oil • garlic • tahini • lemon juice • Greek yogurt • salt • cumin

 Start by roasting the eggplant.

 Cut the eggplant open and scoop out the flesh. Strain the eggplant flesh and place it in a bowl.

Pulse the garlic in a food processor. Add the eggplant, tahini, lemon juice, yogurt, salt, cumin, and some oil. Pulse to combine.

Transfer the eggplant dip to a bowl and drizzle the remaining oil on top.
