In a medium-sized bowl stir together eggs, Canadian-style bacon, chives, salt, pepper and paprika (or chili powder).
Heat the skillet over medium heat and cook the eggs without touching them until the edges start to set.
Use a large spoon or spatula and slowly lift and fold the egg mixture. Continue to cook until the eggs are cooked through.
Lay the two pitas on a plate and spoon the egg mixture evenly into the two pita halves. Top with shredded cheese and extra chives.
