BREAKFAST PITA RECIPE
These protein packed, easy breakfast pitas are a great way to add protein into your daily meals and are easy to make.
This is one of those great recipes that you can have prepared, cooked and on your table in under 15 minutes.
Don’t just think breakfast either, this is a great recipe to use for a bunch or easy lunch, and the recipe can easily be doubled or tripled for a crowd.
I serve my bacon egg and cheese recipe in a pita, but you could just as easily serve bacon egg and cheese on a bagel.
The fluffy, moist eggs are a nice addition to the savory bacon.

RECIPE TIPS FOR BREAKFAST PITAS
- PROPERLY SEASON THE EGGS: Eggs benefit from proper seasoning, and it will make a difference to the taste of the finished dish.
- DON’T OVERCOOK THE EGGS: Take care not to overcook the eggs, you want them to be light and fluffy, not hard and rubbery.
- BEST SERVED FRESH: This is a dish that is best served fresh, as the eggs can become a bit hard if left to sit.
- ADD EXTRA FLAVOR: Chop some olives or sun-dried tomatoes and stir them through the egg, just before serving.
- PLAY WITH SPICES: Spices add flavor to these egg pitas. Other than paprika or chili powder you could try za’atar, red pepper flakes, oregano, Italian seasoning or curry powder.
- ADD FRESH HERBS: Fresh herbs are a nice addition to this recipe. Try fresh basil, parsley or dill.
- SWAP THE PITA: I’ve served the bacon egg and cheese in a pita pocket, but you can use other bread. If you are trying to cut carbs look for a low-carb pita. Try bacon egg and cheese bagel, or with sliced crusty bread, toasted bread, or wrapped inside a flour tortilla. The options are endless.
- FEED A CROWD: This recipe is easily doubled or trebled to feed a larger group of people.
WHAT INGREDIENTS ARE IN A BREAKFAST PITA?
LARGE EGGS: I always use cage-free or good quality free range eggs in this recipe when possible.
SEASONING: I season the eggs with salt, black pepper, paprika or some chili powder.
BACON: I use pre-cooked bacon, diced up and stirred through the eggs as they cook. This is a great option because it cuts down on the cook time. You can use any variety of bacon, regular, smoked, maple cured, whichever flavor you enjoy.
BREAD: I used pita bread, cut in half to make 2 pockets. I tend to try to stay away from the really big, thin pita because it doesn’t stay intact as well as the smaller pita pockets.
HERBS: Chopped chives add a burst of fresh herb to the dish, the onion flavor working well with the bacon egg and cheese.
CHEESE: I add shredded cheddar cheese as it’s got a great sharp flavor, but you can swap this for the cheese of your choice.
HOW TO MAKE THIS BREAKFAST PITA RECIPE
PREPARE THE EGGS. Place the eggs into a medium sized bowl and whisk together, adding in the pre-cooked Canadian-style bacon, chives, a pinch of salt, pepper and paprika (or chili powder if you are using).
COOK THE EGGS. Spray some cooking oil {or you can use regular olive oil} into a large skillet and place of a medium-high heat.
Add the egg mixture to your skillet and allow the eggs to cook on the skillet without touching them until the edges start to set.
Use a large spoon or spatula and slowly lift and fold the egg mixture.
CONTINUE TO COOK THE EGGS. Continue to cook the eggs for about 1 to 2 minutes, or until the egg mixture is cooked through.
FINISH THE DISH. To serve, lay the two pitas on a plate and spoon the egg mixture evenly into the two pita halves. Sprinkle the shredded cheese, green onions and chives on top of each pita each pita and serve with fresh fruit.
TIP: If you want the pita to be slightly crispy and warm you can put the pitas on a baking sheet, rub them with olive oil on each side of the pita and bake at 300 degrees for about 3-4 minutes or you can quickly heat the pitas in a grill pan.
WAYS TO MODIFY THIS BACON AND EGG PITA
CHEESE: I used cheddar cheese in this breakfast pita but there are a lot of great options you can use. Try feta cheese, goat cheese, mozzarella cheese, pepper jack cheese, mascarpone cheese or cotija cheese.
SPICES: You can spice this up however you like. If I want more bold flavors I will add chili poweder, cumin and paprika. If I want more of a Mediterranean inspired breakfast pita I will add a touch of sumac or za’atar.
SPICE IT UP: I love spice and a breakfast pita is the perfect place to spice things up. You can add jalapeños, hot sauce, a sprinkling of crushed red pepper or cayenne red pepper.
HERBS: Fresh herbs can take this pita to the next level. Try fresh parsley, dill or basil.
VEGETABLES: I love adding vegetables like sun-dried tomatoes, green pepper, sliced avocado, red onion, roasted red peppers, artichokes or olives to these pita pockets. This recipe also works well with leftover roasted vegetables or you can quickly saute veggies like bell peppers, onions and mushrooms to add into the pita.
GREENS: Leafy greens are a great addition. Try spinach, arugula, kale, a mixed green blend or romaine.
PROTEIN: You can swap the bacon for crumbled breakfast sausage, smoked salmon, ham, ground chicken or turkey, ground beef or your favorite plant-based alternatives. Use scrambled tofu instead of scrambled eggs for a vegan and high-protein option.
SPREADS: I like to add a spread to my pita. A few I suggest are this Easy Lebanese Hummus, Baba Ghanoush or this Lemon Whipped Feta Dip.

Breakfast Pita Recipe
Ingredients
- 4 eggs
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1 tsp. paprika or chili powder {optional}
- 2 pieces of pre-cooked bacon, diced
- 1 piece of pita bread, cut in half
- 2 tbsps. chives, finely chopped
- 1/4 cup shredded cheddar cheese {or cheese of your choice}
Instructions
- In a medium sized bowl stir together eggs, Canadian-style bacon, chives, salt, pepper and paprika {or chili powder}.
- Spray cooking spray on a medium skillet. Heat the skillet over medium heat.
- Add egg mixture to your skillet.
- Let the eggs cook on the skillet without touching them until the edges start to set. Use a large spoon or spatula and slowly lift and fold the egg mixture.
- Continue to cook the eggs for about 1 to 2 minutes or until the egg mixture is cooked through.
- Lay the two pitas on a plate and spoon the egg mixture evenly into the two pita halves. Top each pita with the shredded cheese and extra chives.
Notes
You can easily add other vegetables to the egg mixture when cooking like onion, bell pepper, garlic or zucchini. You will want to chop them small so they cook quickly or cook them separately.
Spices add flavor to these egg pitas. Other than paprika or chili powder you could try za'atar, oregano, Italian seasoning or curry.
Fresh herbs are a nice addition to this recipe. Try fresh basil, parsley or dill.
You can make this for a crowd- it can easily be double or tripled.
