These Easy Chicken Kabobs combine chicken breast, with bell pepper, zucchini and red onion. The Chicken Kabob Marinade is made with fresh lemon zest and juice, extra virgin olive oil, Greek yogurt and seasoning.

Add the chicken, vegetables, seasonings, lemon juice and zest, and Greek yogurt to a bowl. Coat the chicken and vegetables in the marinade. Cover and marinate for up to 2 hours in the refrigerator.
If you are using wooden skewers, soak them in cold water for an hour. Then alternate threading the chicken and vegetables onto the skewers.
Drizzle olive oil over the skewers and grill over medium-high heat for 6 minutes on each side until chicken reaches an internal temperature of 165°F.
Remove the kabobs from the grill and serve warm with fresh cilantro or parsley and green onion.
