HOMEMADE MINESTRONE SOUP

Homemade minestrone soup is a tomato based hearty soup that  is packed with vegetables and beans. If you love traditional Italian minestrone soup, then you will love this homemade vegetarian soup.

Small Pasta | Olive Oil Onion | Garlic Cloves | Celery Carrots | Vegetable Broth Classico Riviera Marinara Sauce Diced Tomatoes | Bay Leaves Spices | Parmesan Rind  Frozen Green Beans Zucchini | Red Kidney Beans White Beans | Fresh Spinach

KEY INGREDIENTS

Cook,drain and rinse the pasta according to the package. Set aside. In a large pot sauté the onion. Add the garlic, carrots and celery. Sauté for another 3-4 minutes.

Add the Classico Riviera Marinara Sauce, broth, tomatoes, bay leaves, basil, thyme, oregano, rosemary, salt, pepper and parmesan rind {optional} and bring to a boil.  Turn the heat down to low and simmer covered for 30 minutes.

Add the frozen green beans, zucchini, red and white beans and continue simmering for another 4-5 minutes. Add the spinach and let the spinach wilt. 

For the meat lovers, try adding sweet Italian sausage for an even heartier meal.
