Mediterranean Zucchini

You will love this Mediterranean Zucchini Pasta Salad during the warmer months! This light and healthy salad mixes spiralized zucchini noodles with chickpeas, fresh vegetables, olives, feta cheese, green onions and parsley and is topped with a light Greek dressing.


• Spiralized zucchini noodles • chickpeas • english cucumber • cherry tomatoes • red bell pepper • kalamata olives • feta cheese • green onions • fresh parsley • lemon juice • extra virgin olive oil • red wine vinegar • oregano • Salt and pepper

Spiralize your zucchini if you aren't using pre-spiralized zucchini. Lay the zucchini noodles on a paper towel. Sprinkle with salt and let the moisture come out. Then, pat dry.



In a bowl, place the zucchini noodles, chickpeas, cucumber, tomatoes, bell pepper, olives, feta cheese, green onions, and parsley.



Combine the dressing ingredients. Pour the dressing over the salad and toss. Add salt and pepper to taste.



 Serve with pepperoncinis and lemon wedges.
