Oven Baked  Carrot Fries

These Oven Baked Carrot Fries are a deliciously healthy alternative to regular potato fries. The carrots are coated with oil, tossed into a spiced chickpea flour, then baked to crispy perfection.

KEY INGREDIENTS

Carrots | Chickpea Flour Salt | Black Pepper Smoked Paprika | Cumin Garlic Powder | Oregano Nutritional Yeast Extra Virgin Olive Oil GARNISH Green Onion | Cilantro Lime Wedges

Combine the chickpea flour, salt, pepper, smoked paprika, cumin, garlic powder, oregano and nutritional yeast, then set aside.

INSTRUCTIONS

Add the carrots to a large mixing bowl. Mix in the olive oil with your hands. Next, add the chickpea flour mixture and mix until the carrots are fully coated.

Spread the carrot fries on a prepared baking sheet and bake at 425°F for 20 minutes, flipping halfway until crispy and cooked through.

Remove from the oven and serve with fresh cilantro, lime wedges and crushed red pepper. Serve with hummus for dipping.
