Instructions
FOR THE PLAIN WHIPPED COTTAGE CHEESE: Add the cottage cheese to a high speed food processor or blender along with the black pepper. Blend until smooth. Taste and add more black pepper to taste.
FOR THE GARLIC HERB WHIPPED COTTAGE CHEESE:
For this version add in the olive oil, garlic, parsley, chives and basil with the cottage cheese and black pepper to a high-speed blender and process until smooth.
Taste and season with more salt and pepper to taste. If you want a thinner texture, you can add a tad more olive oil or lemon juice.
Serve in a shallow bowl with fresh herbs and crushed red pepper. Serve with fresh vegetables and pita chips.
FOR THE LEMON HERB WHIPPED COTTAGE CHEESE:
For the lemon version add lemon juice and lemon zest, garlic, fresh dill and fresh parsley along with the cottage cheese and black pepper to a high-speed blender and process until smooth.
Taste and season with more salt and pepper to taste. If you want a thinner texture, you can add a tad more olive oil or lemon juice.
