Curried Quinoa Salad is an easy, filling salad that mixes quinoa, sliced almonds, raisins, carrots, radishes, bell peppers, fresh cilantro and curry dressing. You will love this salad for the spring season.

Cook quinoa and set aside to cool. In a large bowl mix vegetables, raisins, sliced almonds, cilantro, and green onions. Gently mix in the quinoa.
Whisk together the olive oil, lemon juice, tahini, syrup, curry powder, paprika, oregano, cumin and salt and pepper.
Drizzle half the dressing over the salad and gently mix together. Taste and add more dressing as needed. Serve immediately or refrigerate until ready to serve.
This salad would be nice alongside a protein during a weeknight dinner, or an easy lunch option .
