SLOW COOKER TURKEY QUINOA CHILI
I am coming back at you today with a delicious, hearty and healthy turkey chili recipe. Slow Cooker Turkey Quinoa Chili cooks while you go about your day. Yes, my favorite thing! That crockpot is getting a lot of work these days. This turkey chili uses quinoa to add texture and give the chili extra protein and fiber.
This Slow Cooker Turkey Quinoa Chili uses black beans and hominy but you can use whatever beans you have on hand. Some ideas are kidney beans, chickpeas and white beans. I like using ground turkey in my chili recipes to make it a bit leaner but beef also works great. If you are a vegetarian this recipe also works really well without any meat. You could add an extra can of beans to help bulk it up.
One of my favorite things about chili is how versatile it is and how you can modify it to your tastes. If you want to add more vegetables you can throw in some bell peppers, corn, zucchini..whatever you fancy! I especially love loading my chili up with toppings once I am ready to eat it.
Some ideas for garnishes include sour cream, cheese, cilantro, green onion, crushed tortilla chips and jalapeños. As the big football game approaches this is the perfect meal to have cooking and ready when your guests arrive to watch the game. You can spend the game watching and socializing instead of cooking!

Ingredients
For the chili:
- 1 lb. ground turkey
- 1/2 sweet onion, chopped
- 4 garlic cloves, minced
- 4 oz. diced chiles
- 1 - 15 oz. can of diced tomatoes
- 1 - 15 oz. can of black beans, drained and rinsed
- 1 - 15 oz. can of hominy, drained and rinsed
- 2 Tablespoons tomato paste
- 1 teaspoon cocoa powder
- 2 Tablespoons chili powder
- 2 teaspoon cumin
- 1 teaspoon coriander
- 1/4 teaspoon cayenne pepper {optional}
- 1 teaspoon paprika
- 1 teaspoon oregano
- 2 cups quinoa, cooked
Garnishes:
- Cilantro
- Cheese
- Sour Cream
- Green Onion
Instructions
- Cook the ground turkey in a media skillet over medium heat until the turkey is golden brown and cooked through. Add it to the slow cooker along with all of the other ingredients.
- Cook on low for 4 hours.
- While the chili cooks, cook the quinoa according to the package.
- When the chili is ready to serve put a scoop of quinoa in the bottom of a bowl and top with chili and your favorite garnishes like cilantro, cheese, sour cream and green onion.
Notes
This chili freezes nicely. I would freeze it without the quinoa in it and just make the quinoa when you are ready to eat the chili.
You can use beef in this recipe or leave the meat out all together.
Try a different variety of beans like red kidney beans and chickpeas.
