Easy Date Granola Bars

My Easy Date Granola Bars are made with oats and packed full of delicious dates, apricots and cranberries. This recipe could not be any easier and makes a great kid-friendly snack! 


Date Paste | Coconut Oil Honey or Maple Syrup Vanilla Extract | Oats Apricots | Mixed Nuts Dried Coconut Chips Dried Cranberries  Salt | Mixed Seeds

Melt the date paste and honey and stir in oil and vanilla extract. In a large mixing bowl, combine oats, apricots, mixed nuts, coconut chips, cranberries, mixed seeds and salt.


Mix in the date mixture and make sure everything is moistened. Transfer the mixture to a prepared baking pan and spread into an even layer.

Refrigerate for at least 2 hours or overnight. Then cut into 12 even-sized bars, using a sharp knife. Store in an airtight container in the refrigerator or freezer.

Granola bars are a convenient snack or breakfast-on-the-go option. They are a great source of protein and fiber which keep you fuller and feeling satisfied for longer.
