HOMEMADE BANANA OATMEAL COOKIES
My kids love cookies and these Homemade Banana Oatmeal Cookies are top of their list.
These are a soft, chewy cookie that mixes together bananas, oats, coconut flour and coconut oil to create a delicious treat.
These are a nice change from the usual cookies like these Sea Salt Chocolate Chip Cookies or these Peanut Butter Pretzel Chocolate Chip Cookies that my kids eat.
I love making these cookies when I have leftover bananas which is often.
We usually end up with one overly ripe banana and I don’t know what to do with it so end up making these Homemade Banana Oatmeal Cookies.
I also like using ripe bananas for these Banana Oatmeal Muffins and this Pineapple Smoothie.
These Banana Oatmeal Cookies are a great snack for adults and kids and they freeze great for later!
WHAT INGREDIENTS ARE IN THESE BANANA OATMEAL COOKIES?
FLOUR: This recipe uses oat flour. You can buy it at the grocery store or make your own.
Oat flour is a grain flour made from oats that is gluten-free. It’s a very healthy product, with more protein and fiber than regular flour and is lower in carbs.
SUGAR: Coconut sugar is used as the sugar in this recipe. You could use regular granulated sugar if you would like.
BAKING POWDER: The baking powder helps the cookies rise when you bake them.
NUT BUTTER: I use almond butter for these cookies but you can use cashew or peanut butter.
Each will alter the taste a bit to the nut butter you use.
COCONUT OIL: The melted coconut oil helps hold these cookies together and give them a soft consistency.
BANANAS: I used 1 small mashed banana in this recipe. It is a great use for leftover bananas!
OATS: For this recipe I used old fashioned oats.
CHOCOLATE CHIPS: You don’t have to add chocolate to this cookie recipe but if you want to I like using chocolate chips or chopped chocolate.
You can use semi-sweet or dark chocolate.
HOW DO YOU MAKE THESE BANANA COOKIES WITH OATMEAL?
Preheat the oven to 350 degrees F.
Prepare a baking sheet with parchment paper.
In a bowl, mix the oat flour, sugar, baking powder, cinnamon and salt.
Then add the wet ingredients to the flour mixture and mix until the dough becomes soft.
Now fold in the old fashioned oats and chopped chocolate/chocolate chips.
Cover with film and refrigerate for at least 30 minutes (do not skip this step!).
Scoop (or with wet hands) roll the dough it into 12 balls, place in the baking sheet flattening them slightly.
Bake for 15-20 minutes, until cookies are golden brown and flat.
Remove from the oven and let the cookies cool completely – they come out of the oven soft and harden as they cool.

- ½ cup coconut sugar or other granulated sugar
- 1/2 teaspoon ground cinnamon {optional}
- 1 teaspoon baking powder
- 1 Tablespoon almond butter or cashew butter
- 1/2 cup melted coconut oil
- 1 small mashed banana
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 cup old fashioned oats
- ½ cup dark chocolate chips or chopped chocolate
