Mediterranean Style Tofu Tacos

Mediterranean Style Tofu Tacos are perfect for those trying to incorporate more plant-based meals into their diet or would also be a  great option for lent. The crispy tofu is the perfect taco filling.


Tofu | Extra Virgin Olive Oil Paprika | Oregano Garlic Powder | Tortillas Cherry Tomatoes | Red Onion Cucumber | Lemon Juice Fresh Parsley | Green Onion Feta Cheese

Combine the spices in a small mixing bowl. Mix the crumbled tofu, olive oil, and spices until tofu is covered. Spread the tofu on a baking sheet. 


Bake the tofu for 30 minutes, using a spatula or spoon to mix it halfway through or until the tofu is slightly browned and crispy.

Combine the vegetables with olive oil and lemon juice until mixed well and set aside. Spoon the tofu into the tortillas.

Top the tacos with the tomato salad, feta cheese, fresh parsley and green onions.
