Cook the orzo. Meanwhile, cut the corn off the cob or measure out frozen/canned corn. Optionally char the corn and let it cool in a bowl. Add the other ingredients and stir. Mix in the orzo next.

Stir together the ingredients for the dressing. Add the dressing to the salad and mix. Adjust spices and lime juice to your tastes.

Sprinkle the cotija cheese and mix. Refrigerate before serving.
